Has anyone ever worked with sweet potato starch? Can it be used like potato starch? I'm thinking of trying Spätzle again - this time with sweet potato starch instead of arrowroot starch...

I actually had a similar thought. However, I was thinking more about putting the sweet potato in the dehydrator and then grinding it.
