Mix 300 g of millet, 2 tablespoons of natural yeast based on molasses, 1 tablespoon of brown sugar, and 1 liter of lukewarm water, and let it sit for two days. You can stir it occasionally with a wooden spoon. At some point, it will start to bubble nicely, and then the millet is fermented. Now, I pour off the water and use the millet either in a pressure cooker�in this case, I do rinse it again with water before putting it into the pressure cooker. If I bake my bread with this millet, I don't rinse it but leave the ferment in the millet for further fermentation.
