Carotenoids are the substances that give color to fruits and vegetables. More than 600 carotenoids are found in plants worldwide. Plants need them, because free radicals are formed during photosynthesis. To prevent these radicals from destroying the chlorophyll molecules that are essential for them, antioxidants are needed in the plant cells - and these are the carotenoids. In the course of evolution, each plant species has more or less developed its own type of carotenoid.
